Halibut & Fennel Caper Bake
2 halibut steaks
Salt & Pepper for seasoning
Garlic Powder
Fresh Thyme
Extra Virgin Olive Oil
Salted butter
1 chopped fennel stock
1 small onion
Dash of red wine vinegar
Salt & pepper for seasoning
Tablespoon of capers (without juice)
Preheat oven 375 degrees. Wash halibuts and place on a baking dish. Season halibut with salt, pepper and garlic powder. Cut a slice of butter as you would for toast and place on top of halibut steaks. Chop the fresh thyme and sprinkle onto the steaks. Lightly drizzle olive oil over steaks and place in oven to bake for 20 minutes.
In a sautee pan add a tablespoon of extra virgin olive oil and chopped fennel and onion to pan. Add salt & pepper then a dash or two of red wine vinegar. Sautee for 5 minutes then add capers (without juice) and sautee till the fennel & onions are lightly wilted. About 10 minutes or less.
When halibut is done add the fennel/onion sautee over halibut and serve.
