COOKING: Baked Potato Wedges

Tonight I made an quick and easy dinner.
Yep!
I said dinner.
Too lazy after a long day and all I have been craving were these garlic potato wedges.

I copied Barefoot Contessa's recipe and will share it with you.

BAKED POTATO WEDGES

INGREDIENTS
4 large baking potatoes, unpeeled
4 tablespoons olive oil
1 1/2 teaspoon kosher salt
3/4 teaspoon freshly ground black pepper
2 cloves of fresh garlic, minced.
1 teaspoon minced fresh rosemary leaves


Preheat your oven to 400 degrees.

Scrub and wash your potatoes.


Mince your garlic cloves.


Chop your potatoes in half lengthwise.
And chop in thirds.


Spread them out on your baking pan.


Drizzle your olive oil over the potatoes.


Sprinkle kosher salt over potatoes.


Grind fresh black peppercorn.


Mix potatoes with your minced garlic.


With clean hands mix everything together and line all the potatoes in a row.


Bake them for 20 minutes.



Then turn them on their other side and bake for another 20 min.


When done you can sprinkle grated Parmesan cheese over your potatoes.
I used grated Pecorino Romano cheese I had from a previous meal.




Plate and enjoy!
I like to dip my potatoes in ketchup!
