Pan Roasted Salmon
INGREDIENTS
4 salmon fillets, skinned
1 tbsp. olive oil
2 tbsp. brown sugar
2 tsp. kosher salt
1 tsp. ground black pepper
1/2 tsp. ground cumin
1/4 tsp. dry mustard
1/8 tsp. ground cinnamon
Preheat oven to 350 degrees
Combine brown sugar, salt and spices in a small bowl
Rub spice mixture on the top side of the salmon fillets.
Sear fillets, rub-side down, in oil in a large non-stick skilet over high heat.
Brown rub side down for 5 minutes.
Transfer to a pan and pop in the oven for 15 minutes.
Roast salmon until they flake easily with a fork.
Serve with garlic wilted spinach and Parmesan polenta.
*Parmesan polenta recipe calls for 1 tbsp but use 1 tsp instead.
