Extra Fancy Ham Cups

Pinterest is a wonderland full of useful things!

Because of this useful site I found this cooking blog that has recipes up my ally.

As much as I love to cook, I enjoy quick and easy dishes.
Uncomplicated and able to fill my belly in less than 30 minutes.
Especially if it's breakfast because I'm always hungry when I wake up.

So this morning I decided to try out The Simple Delight's recipe for Ham Egg Cups.

For my recipe I used 3 eggs and didn't have green onions on hand. I also changed up the ingredients a bit.
Specifically to make it a little fancy I used truffle salt, truffle Italian cheese and caviar.

YOU WILL NEED
Muffin tin
Cooking spray
Black peppercorn & Truffle Salt (I bought mine from World Market)
Italian Truffle cheese (Trader Joe's - leave in fridge until egg cups are done)
3 large eggs
Thin sliced deli ham

Cheese in picture is not the Truffle Italian Cheese. Mine didn't have a label so I used a different cheese for reference.
Preheat your oven 400 degrees.

Spray your muffin tin with cooking spray.

 Line your ham in the cups. I ended up using 2 slices per cup


Carefully crack an egg into the cup.
If it helps, crack an egg in a bowl and pour into the ham cups.


Sprinkle with truffle salt and black peppercorn



Bake the 3 cups in the oven for 15 minutes.


To remove the cups I used a slotted spoon and carefully rimmed the ham.
Then used a fork to help push the cup into the spoon.
The ham should not stick to your muffin tin if you sprayed it with extra virgin olive oil.
Once plated take your truffle Italian cheese out of the fridge and grate over cups.

Top with caviar and serve with sourdough bread.


A fancy breakfast that took under 30 minutes to make.
