Pumpkin Cheesecake

I attempted to bake tonight.
I'd have to say I am better at cooking than baking - but tonight it came out pretty yummy!

Decided to make pumpkin cheesecake as I've been craving it lately.
I purposely made more filling because I wanted to give one to my parents.

Since I'm not a big fan of gingersnap crust I used premade store bought frozen pie crust.

So in they went.
Crossed my fingers they came out edible.


Baked in the oven for 1 hour and 20 min.
The house smelled like cloves, ginger, cinnamon and all the festive scents!

Out they came.


A bit cracked and poofed up but I knew the poof-ness would go down once cooled.
The cracking, well... I'll need to work on that.

Still poofy.


And about an hour after it's cooled down and right before I chilled it in the fridge.
No poofing.


Now...here's the part I'm really bad at.
Slicing any cakes, pies or brownies!
I am HORRIBLE at slicing things without making a crumbly mess.
Probably because I really want to just get it in my mouth!


See! It totally fell apart because I'm rushing to get the delectables in my mouth!
It's ok because I just threw on a dollop of fresh cinnamon vanilla bourbon whipped cream.
(And used the crumbled bits as decoration since I don't have any fresh mint leaves)


How did it taste?
DELICIOUS!
I'm not a big fan of pumpkin PIE but pretty much cheesecake has my heart.
And also it passed the Lonny test also.
He isn't a fan of anything pumpkin but he kept asking for a slice.
I plated him a slice for him and went to the kitchen to grab him a napkin...came back & it was gone.
Must have been good. :)

On another note, I have a Christmas wreath!
A live one.
Lonny brought it home for me tonight.
I think he feels bad I can't find the one I made as a kid.
Can't believe I lost it but I think it got thrown out in the move.


It's really starting to feel like Christmas now. :)

That looks good and I swear I have never heard of pumpkin cheesecake. We dont do pum[kin pie or cheesecake here. I wonder why!
Lonny is such a darling. How very thoughtful he is!

@ DeAnna - LOL I think the only pie I actually like is fresh strawberry. I'm not a big fan of cooked apples so I'll never like apple pie. Not a fan of canned peaches or cherries. It has to be freshly made peaches for me to enjoy. HAHA :) Yes, Lonny's a sweetheart. I need to put it up on my front door. I can't wait! :) Just have to go to Target later to buy a hook for the door. My old hook & wreath went missing. :(

@ La Dolce Vita - Thanks!!! I love cinnamon but have never baked with cloves or ginger. This was a first but a success so I can't wait to find more baking recipes. :)
