Asparagus and Lemon Goat Cheese Tart
I found this amazing recipe from FoodGawker (favorite new website!) that linked me to this original website that can be found here!
I altered the recipe a little bit but not by much.
INGREDIENTS
5 thin stalks of asparagus.
*Depending on the size and thickness you may need to half them in the middle or down the center.
12 grape tomatoes, rinsed and halved
4 ounce goat cheese log, crumbled
*I found lemon goat cheese or even herb goat cheese would be flavorful kick.
4 eggs, whisked
2/3 cup whole milk
Salt & Pepper to taste
Handful of fresh basil, roughly chopped
1 ready made pastry shell in a pie pan
DIRECTIONS
Preheat oven to 400 degrees. Rinse and trim the asparagus to fit your pie pan, set aside.
Use a fork to make small holes around the base of the pastry shell.
Place in the center of the oven and bake for 5 minutes.
*Set your timer our you'll forget it's par baking in the oven*
In a large bowl, crumble the goat cheese. Pour in milk and whisk until the cheese.
Add eggs and season with salt and pepper.
Add basil.
Pour liquid into partially baked pastry shell.
Arrange asparagus first them carefully arrange your tomatoes.
Place on a baking sheet and bake in the oven for 35 minutes.
If the crust browns too fast you can always use a foil tent to keep it from burning.
Cool before service.
The tart will be slightly raised upon removing from the oven.
Let it cool 10 minutes then slice and serve!
